Confessions from a Cajun's Kitchen

Ok, I suppose it is time for all of you to know the truth about me, except Joni, she has known the truth for a very long time....and she is still friends with me....thank you Joni!
I cannot make Roux. This is startling news, I know. You can go ahead and catch your breath, sit down if you are a stand up blogger. Get a refreshing drink, I know this just takes your breath away.
This is a cardinal sin if you are a Cajun, not to make your own Roux. I think they may even kick you out of the click of Pig Roasts, Oyster Fry's and Crawfish Boils. I think. Well, the good thing about Cajun's is they KNOW how to cook, and CHER' they ain't neva too proud to sit their little coonass down and give em a lil lesson in the kitchen, her' her'.
Only, I am in Texas. Before that, Florida. Before that, Texas. So, like the Texans do with Mexican hot sauce, I import! That's right folks, I import my Roux right out of Lafayette, Louisiana. Savoy's Roux rocks the house. Why mess with perfection? Grandma Savoy done perfected that recipe some 57 years ago, maybe even longer...
Today, however, was a sad day for the Cajun's....as I had no more Roux from Savoy, so I had to make my own. I got myself in the mode, I started talking Cajun French to myself, doing the Cajun Two Step and hearing Zydeco music in my head, then, I called upon Paula Deen.
I whipped out all the ingredients and.......I ruined it, couldn't get it brown enough, made some amazing celery and onion dough balls....that were beginning to look appetizing, after so many failed attempts.
I had to resort to my Talk About Good Cajun cookbook, from the Louisiana Southern Most Junior League.
I made a slightly off white Roux with Mrs. Ronald Ardoin's recipe, so I went with it. I am ashamed to say that my Gumbo tonight, by request from my husband, might just be my last Gumbo. It may go down in history as some white chicken and sausage cajun SOUP that I once made. Ohhhhhh, I have officially made NORTHERN Gumbo. I am sorry to Dawn, Dayna, my family, and Vicki for letting my fellow Cajun's down. I so solemly promise that upon my return to Louisiana at Christmas, that I will buy stock in Savoy's so that I can aspire to make you all proud again, with my Roux in a jar recipe's.

    You are too cute.
    I am recovering from a southerner, especially a cajun, who can't make roux. LOL!
    So funny. but you know what? Most northerners don't have a clue what roux is. So it's okay.
    That's what grocery stores are for!!
